Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavor and body of the sauce as it softens and breaks down.
Milk
Forms the creamy base of the sauce and adds richness and mild sweetness.
Butter
Adds fat for a smooth, rich texture and carries flavor.
Flour
Thickens the sauce by absorbing liquid when heated with the butter.

The step that matters

Stirring the butter and flour into the boiling liquid. Flour mixed with butter and added to hot liquid can clump if not stirred well. Blending it smooth first and stirring as it goes helps the starch disperse evenly and thicken the sauce without lumps.
