Preserved Celery

Ingredients

Directions

Prepare the celery

  1. Cut the celery into 6‑inch pieces.

  2. Parboil the celery pieces for 5 minutes, then immerse the celery in cold water.

  3. Drain the celery and dry it.

Make the lemon flour liquid

  1. In a saucepan, bring 1 gallon of water to a boil.

  2. Dilute 3 tablespoons of flour in cold water and add the diluted flour to the boiling water.

  3. Add the juice of 3 lemons and a little salt to the boiling water.

  4. Remove the saucepan from heat when the mixture is half cooked and let it cool.

Pack and seal

  1. Clean each piece of celery in lukewarm water.

  2. Arrange the celery in tin cans.

  3. Pour lightly salted cold‑boiled water into the cans.

  4. Add the juice of 1 lemon to each can.

  5. Seal the cans.

Process

  1. Boil the sealed cans in a hot water bath for 2 hours.

What each ingredient does

Celery
Is the vegetable being preserved, so it forms the main body of the finished product.
Flour
Thickens the boiling liquid so it becomes a light, slightly body-giving brine.
Lemon juice
Adds acidity that brightens flavor and helps keep the celery pale and fresh-tasting.

The step that matters

Boil the sealed cans in a hot water bath for 2 hours. Heat must reach the food inside the sealed cans for long enough to destroy harmful microorganisms. Under-processing risks spoilage or foodborne illness, so the full time should be held at a steady boil.

Fit is the average pairing score against celery, flour. Candidates are from the same food group and used in at least 100 recipes.
