Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish and soak up the milk and butter as they stew.
Milk
Provides the liquid that cooks the potatoes and forms a creamy coating as it reduces.
Butter
Adds richness and a smooth finish when tossed in at the end.

The step that matters

Simmering until the milk is nearly reduced. If the milk reduces too far it can scorch on the pan bottom, while too little reduction leaves the dish watery. Watching the liquid level keeps the potatoes moist and coated.

Swap the nutmeg

How well each one fits the dish's main ingredients (potato, milk, butter, pepper, sauce, parsley):

  1. Thymefits better
  2. Dillfits about as well
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against potato, milk, butter, pepper, sauce, parsley. Candidates are from the same food group and used in at least 100 recipes.
