Potatoes, Duchesse

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the potatoes as in the previous recipe, adding a little boiled milk while mixing.

  2. Place the mixture on a floured surface and roll it into cork shapes, each three inches long.

  3. Flatten each shape to one inch thick and arrange them in a buttered and floured pan.

  4. Impress a design on the top of each potato shape.

  5. Baste with a brush dipped in milk mixed with the yolk of one raw egg.

  6. Bake in a 400°F (200°C) oven for ten minutes until golden brown.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
