Fried Sweet Potatoes, Puffed
Ingredients
Directions
Peel the sweet potatoes and slice them lengthwise into pieces ¼ inch thick.
Fry the slices in lard that is not too hot until soft, then drain them.
Heat the lard again until hot, then add the potatoes, turning them with a skimmer for a few minutes.
When puffed and browned, drain them on a napkin.
Season with salt and pepper, and serve on a napkin.
