What each ingredient does

Beets
Provide the main body and earthy sweetness of the stew.
Butter
Adds richness and carries flavor as the onion softens and the beets finish cooking.
Onion
Adds savory sweetness and aroma as it softens in the butter.
Vinegar
Adds acidity that sharpens the flavor and balances the beets' sweetness.

The step that matters

Bring the vinegar to a boil before adding the beets. Boiling the vinegar briefly drives off some of its sharp raw edge, so the stew tastes balanced rather than harsh. Adding the beets afterward lets them warm through in the seasoned liquid without overcooking.
