Roast Beets

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Rub the beets with a towel soaked in brandy.

  2. Place the beets on a wire rack in a roasting pan.

Roast and serve

  1. Roast for about 6 hours at 300°F (150°C) until the crust is carbonized and the center is sweet.

  2. Serve as a delicious dish.

What each ingredient does

Beets
Form the dish itself; their sugars caramelize and sweeten as they roast slowly.
Brandy
Adds aroma to the beet skin as it is rubbed on before roasting.

The step that matters

Roasting until the crust is carbonized. Long, dry heat at 300°F drives browning and caramelization of the beet sugars, which sweetens the center. Stopping too early leaves the flavor flat, while going too far can burn the crust.
