What each ingredient does

Cucumbers
Form the main body of the dish, becoming tender and moist when cooked gently.
Butter
Adds richness and carries the seasonings as the cucumbers cook in the saucepan.
Cream sauce
Adds creaminess and a smooth, rich coating to the cooked cucumbers.
Vinegar
Adds a sharp acidity that brightens the mild cucumber flavour.

The step that matters

Cover and cook on moderate heat until tender. Cucumbers are mostly water, so cooking them gently under a cover lets them soften while holding their moisture. Too much heat or too long can make them mushy and watery, and the cream sauce added afterwards may then thin out.

Swap the cucumber

How well each one fits the dish's main ingredients (vinegar, butter, pepper, nutmeg, sugar, cream, sauce):
