What each ingredient does

Gelatine
Sets the coffee liquid into a firm, sliceable jelly as it cools.
Coffee
Forms the liquid base and gives the jelly its coffee flavour.
Sugar
Adds sweetness and balances the bitterness of the coffee.

The step that matters

Dissolve the gelatine fully before setting. Gelatine must dissolve completely in the warm mixture, or it can set unevenly with soft or grainy spots. Keep the boil gentle and no longer than needed, since prolonged strong boiling can weaken gelatine's setting power.
