Why it works: Anchovy and ketchup match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 479 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does

Oysters
Provide the main seafood flavor and tender, briny texture in the dish.
Butter
Adds richness and helps the topping brown in the oven.
Fine breadcrumbs
Absorb the oyster liquor and form soft layers that set and crisp on top.

The step that matters

Stew the oysters briefly. Oyster proteins firm up quickly when heated. Stewing only 2-3 minutes keeps them plump and tender, while longer cooking makes them shrink and turn rubbery before the dish is baked.
