Ice Cream

Ingredients

Directions

Prepare the base

  1. Pour the cream into a broad pan and gradually stir in the powdered sugar until well mixed.

  2. Strain the mixture through a sieve into a tin with a close cover.

  3. Blend the almonds with a little rose-water to a smooth paste.

Freeze

  1. Place the tin in a tub filled with small pieces of ice and a large quantity of salt, ensuring no salt enters the cream.

  2. As the cream freezes, scrape it down with a spoon from the edges of the tin.

  3. While freezing, gradually stir in the lemon juice or mashed fruit.

  4. Stir the almond paste into the mixture while freezing.

Serve

  1. Once frozen, dip the tin in lukewarm water to remove the cream.

  2. Serve immediately.

  3. Alternatively, pour into moulds and set in a tub of ice and salt.

  4. Before serving from moulds, wipe off the salt, dip in lukewarm water, and turn out the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and richness, giving the frozen cream a smooth, creamy texture.
Powdered loaf sugar
Adds sweetness and helps soften the texture of the frozen cream.
Lemon juice or mashed strawberries or raspberries
Adds acidity and fruit flavour to the cream as it freezes.
Sweet almonds
Adds nutty flavour and body through the smooth almond paste.

The step that matters

Scraping the cream while it freezes. Freezing cream forms ice crystals at the edges of the tin first. Scraping them back into the mixture keeps the texture smooth instead of icy and grainy.
