Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whips into a foam that holds air, forming the light texture of the dish.
Powdered sugar
Sweetens the cream and dissolves easily into it without graininess.
Lemon or orange zest
Adds aromatic citrus oils that flavour the cream.

The step that matters

Whisking until frothy, then draining the froth. Cream whips in stages: over-whipping turns it grainy and can separate it into butter and liquid. Removing the light froth as it rises and returning the drained cream to the bowl keeps the texture smooth and airy until the whisking is finished.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (cream, sugar, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against cream, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
