Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the cream once pounded into a paste.
Cream
Gives the dessert its rich body and smooth, soft texture.
Eggs
Thicken the mixture as they set gently over low heat.

The step that matters

Stir over low heat until thick, avoiding boiling. Egg proteins set into a smooth custard at moderate heat but curdle and turn grainy if the mixture boils. Keeping the heat low and stirring constantly lets the mixture thicken evenly.

Swap the almond

How well each one fits the dish's main ingredients (cream, lemon, egg, orange, sugar):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Walnutfits less well

Fit is the average pairing score against cream, lemon, egg, orange, sugar. Candidates are from the same food group and used in at least 100 recipes.
