Glazed Sweet Potatoes

Ingredients

Directions

The book says “a rather hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the sweet potatoes in salted water until tender, then drain.

  2. Quickly scrape off the skin and cut the potatoes in half lengthwise.

  3. Arrange the halves in a buttered baking dish.

  4. Spread liberally with butter and sprinkle with sugar.

  5. Bake at 400°F (200°C) for 30 to 40 minutes until well browned.

  6. Remove carefully with a flexible knife.
