What each ingredient does

Ripe peaches
Provide the main fruit flavor and the bulk of the mousse's body.
Sugar
Adds sweetness and balances the tartness of the peaches and lemon juice.
Lemon juice
Adds acidity that brightens the peach flavor and keeps it from tasting flat.
Gelatin
Sets the mousse so it holds its shape when chilled.
Heavy cream
Adds fat and whipped air, giving the mousse a light, creamy texture.

The step that matters

Fold in the whipped cream gently. Whipped cream holds air bubbles that give mousse its lightness. Stirring vigorously or folding after the base has set too firmly deflates the foam and makes the texture dense.

Swap the lemon

How well each one fits the dish's main ingredients (peach, sugar, gelatin, cream):

  1. Vanillafits better
  2. Raspberryfits better

Fit is the average pairing score against peach, sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
