Freeze and ripen

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and lowers its freezing point so it stays scoopable.
Rich cream
Adds fat that makes the frozen texture smooth and creamy.
Orange juice
Provides the main flavour and acidity, and liquid for freezing.
Lemon juice
Adds acidity that brightens the citrus flavour and balances the sweetness.

The step that matters

Freeze like ice cream. Freezing while stirring breaks up ice crystals, giving a smooth texture. Letting the mixture stand afterward lets it firm and ripen evenly.

Swap the orange

How well each one fits the dish's main ingredients (sugar, cream, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against sugar, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
