Peach Cobblers

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Make a light dough with baking powder and a small amount of shortening; roll it thin.

  3. Line the sides and bottom of a small bread pan with the dough.

  4. Peel the peaches and place them in the pan with enough water to cook and create juice.

  5. Cover the peaches with a crust, leaving holes for steam to escape.

  6. Bake until the peaches are tender.

  7. Lift the crust and cut it into small pieces.

  8. Spread each piece with peaches and juice, then sprinkle with sugar and small lumps of butter.

  9. Serve with cream or milk.
