Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the juice and rind of the lemon with sugar, egg yolks, butter, and enough milk to fill the pie pan.

  3. Pour the mixture into a pie crust and bake until set.

Make the meringue and finish

  1. Beat the egg whites to stiff peaks, gradually adding sugar until glossy.

  2. Spread the meringue over the baked pie and brown slightly in the oven.

What each ingredient does

Egg yolks
Thicken the filling as they set, giving it a rich, custard-like body.
Lemon juice
Provides the tart acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and helps stabilise the whipped egg whites in the meringue.
Egg whites
Whip into a foam that sets into the light, airy meringue topping.

The step that matters

Beat the egg whites to stiff peaks, gradually adding sugar until glossy.. Under-beaten whites will weep and collapse, while sugar added too fast can prevent full volume. Gradual sugar and proper whipping give a stable, glossy meringue that holds its shape when browned.
