Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Provide the bulk and absorb moisture so the pudding holds together.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Apples
Contribute moisture and tartness and soften into the pudding during boiling.
Currants
Add concentrated sweetness and chewy fruitiness throughout the pudding.
Brown sugar
Adds sweetness and a molasses-like depth of flavor.
Whites of eggs
Fold in at the end to lighten the mixture and help bind it as it sets.

The step that matters

Fold in the egg whites last. Gently folding keeps the whites' trapped air, which lightens the dense mixture. Stirring vigorously deflates the foam and makes the pudding heavier.

Swap the currant
