To Roast Ducks

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Stuff the duck with the prepared stuffing.

  3. Place the duck in the oven, about 2 feet from the heat source.

  4. Baste the duck frequently while roasting.

  5. Roast for 30 minutes to 1 hour, depending on the size and age of the duck.

  6. Check for doneness by ensuring the breast is plump.

  7. Serve with rich brown gravy.
