Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Butter a pie or tart dish.

  3. Layer the sponge biscuits, marrow, and diced peels alternately in the dish.

  4. In a bowl, beat the 3 egg yolks and add the cream, milk, and pounded sugar to taste.

  5. Pour the mixture over the layered ingredients.

  6. Roll out the pastry and cover the dish.
