Tbllow Almond Swkstmsats

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the paste

  1. Blanch the almonds and wash them in cold water.

  2. Dry the almonds completely.

  3. Pound the almonds with enough yolks of eggs to form a stiff paste.

  4. Mix in the powdered sugar and grated lemon rinds. Knead the paste on a sugared surface until well combined.

Shape and bake

  1. Shape the paste into figures about the size of macaroons.

  2. Place the figures on parchment paper on an iron plate. Fry in a moderately hot oven (350°F / 175°C) until deep yellow.

Decorate and serve

  1. To decorate, boil sugar in orange flower water. Brush the warm sweetmeats with the syrup for added fragrance.

  2. Once cooled, transfer to glasses for serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the paste.
Yolks of eggs
Bind the pounded almonds into a stiff, shapeable paste.
Powdered sugar
Adds sweetness and helps the paste hold together smoothly.
Lemon rinds
Add aromatic citrus fragrance to the paste.

The step that matters

Drying the almonds completely. Any leftover moisture from blanching makes the paste soft and sticky, so the figures may spread or struggle to hold their shape in the oven.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, lemon, orange, syrup):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Hazelnutfits less well

Fit is the average pairing score against egg, sugar, lemon, orange, syrup. Candidates are from the same food group and used in at least 100 recipes.
