Roast Meats
Ingredients
Directions
Wash the meat and dry it thoroughly before roasting.
As the fat begins to fall, place a clean dish underneath and baste with the drippings.
Do not sprinkle salt on the meat until it is nearly cooked to avoid excess gravy.
Preserve the drippings by pouring them into boiling water and let cool.
When cooled, the drippings will harden and impurities will settle at the bottom.
If the meat cannot be served immediately, keep it warm by placing it on a dish over boiling water, covering it with a dish and a cloth.
