Apple Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pare, quarter, and slice the apples.

  2. If the apples are not ripe, stew them in just enough water to prevent burning until soft.

  3. Sweeten and season the apples to taste.

  4. If the apples are ripe, do not stew them before baking.

  5. Fill the pie plates with the apple mixture and cover with a thick crust.

  6. Bake at 400°F (200°C) for 30 to 45 minutes.

  7. When baked, cut the upper crust through the center and remove it carefully with a broad knife.

  8. Add a piece of butter, sweeten to taste, and if needed, squeeze in lemon juice.

  9. Flavor the pie with nutmeg, rosewater, or grated lemon peel.
