Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large oysters
Provide the main filling, with their briny flavour carried into the fritter.
Cream
Adds richness and moisture to the batter, helping it coat the oysters smoothly.
Lard for frying
Conducts heat for frying, giving the batter a crisp, golden browned surface.

The step that matters

Dip each oyster into the batter and fry them until golden. The lard must be hot before the oysters go in. Hot fat sets the batter quickly and browns it, while cooler fat soaks in and makes the fritters greasy and heavy.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, pepper, cream):

  1. Celeryfits about as well
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against oyster, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
