Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set during gentle heating, giving it body.
Powdered sugar
Sweetens the custard and dissolves smoothly into the liquid.
Orange juice
Provides the main citrus flavor and acidity for the custard.

The step that matters

Heat over low heat, stirring continuously. Egg proteins set at higher temperatures and can curdle or scramble if the mixture boils or heats unevenly. Gentle, constant stirring keeps the custard smooth and thickened.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
