Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White isinglass
Sets the liquid into a firm, wobbly jelly as it cools.
Lemon juice
Provides the sharp acidity that defines the flavor of the jelly.
Lemon rinds
Contribute aromatic oils and bitter lemon flavor to the liquid.
White sugar
Sweetens the jelly and balances the sourness of the lemon juice.

The step that matters

Strain the mixture and fill glasses when nearly cool. Filling too early can leave the jelly cloudy or unset, while waiting too long lets it thicken unevenly in the glass. Cooling to nearly set lets the isinglass gel firmly and evenly.

Swap the saffron

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits about as well
  4. Saffronthe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
