Rich Plum Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mix flour, sugar, currants, raisins, mace, cloves, nutmeg, and lemon peel in a large bowl.

  2. Melt butter in cream until warm, then add to the mixture.

  3. Beat the egg whites and yolks separately, then combine them with the mixture along with the yeast.

  4. Beat the mixture for a full hour until well combined.

  5. Add plenty of citron and lemon to the batter.

  6. Butter your baking pans and pour in the batter.

  7. Bake in a moderate oven at 350°F (175°C) until done.
