Ingredients

Directions

  1. In a large pot, combine 4 gallons of water, 1½ pounds of coarse brown sugar, 2 ounces of saltpetre, and 6 pounds of coarse sea salt.

  2. Boil the mixture and skim off any scum that rises.

  3. Once the brine is cold, submerge the meat completely in the pickle.

  4. Every two months, bring the pickle to a boil again, skimming carefully.

  5. While boiling, add 2 ounces of coarse brown sugar and ½ pound of coarse sea salt.

  6. This pickle will remain good for twelve months.

  7. After removing the meat, clean and dry it, then place it in a paper bag and hang it in a dry place.
