Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean raw beef
Collects fine particles as it cooks, clearing the broth and adding meaty flavor.
Egg white
Coagulates as it heats, trapping cloudy particles so they can be strained out.
Carrot
Adds sweetness, color and a tender bite to the finished soup.
Turnips
Contributes mild sweetness and a soft texture to the finished soup.
Bright green peas
Add color, sweetness and a tender texture to the finished soup.

The step that matters

When the egg is well cooked, strain through a jelly bag.. The egg white and beef coagulate into a raft that catches cloudy particles as the liquid simmers. Straining before the raft fully sets lets cloudiness pass through, leaving the consommé murky instead of clear.

Swap the peas

How well each one fits the dish's main ingredients (egg, carrot, turnip, beef):

  1. Lentilsfits better
  2. Beansfits better
  3. Chestnutfits about as well
  4. Peasthe original

Fit is the average pairing score against egg, carrot, turnip, beef. Candidates are from the same food group and used in at least 100 recipes.
