What each ingredient does

Oysters
Provide the main seafood flavor and tender texture in the filling.
Milk
Forms the creamy base of the filling, which is thickened to a sauce-like body.
Baking powder biscuit dough
Rises and cooks into light, tender dumplings that sit in the filling.

The step that matters

Thickening the milk with flour. Flour thickens only when its starch is mixed smoothly into the liquid and heated, so it must be stirred well to avoid lumps and cooked enough to lose its raw taste. Stopping too early leaves the sauce thin and floury.

Swap the white pepper

How well each one fits the dish's main ingredients (oyster, milk, butter, parsley, biscuit):

  1. Capersfits better
  2. Nutmegfits better
  3. Thymefits better
  4. White pepperthe original
