Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into soft curds as they cook, forming the body of the dish.
Milk
Adds moisture and softness, keeping the curds tender rather than dry.
Butter
Adds richness and fat, helping the eggs cook gently and not stick.

The step that matters

Cook until creamy, stirring and scraping. Constant gentle stirring over medium heat keeps the egg proteins forming small, tender curds. High heat or leaving the eggs still causes them to toughen and dry out.
