Broiled Steak

Ingredients

Directions

  1. Wipe the steak with a piece of cheesecloth dampened with cold water.

  2. Trim off excess fat and remove the bone, then skewer the meat together.

  3. Grease the broiler with some of the fat.

  4. Place the meat on the broiler and broil under the gas flame.

  5. Turn the steak every ten seconds for the first two to three minutes to sear the surface.

  6. Reduce the heat and turn occasionally until richly browned on both sides.

  7. For one-inch thick steaks, cook for eight to ten minutes for rare or twelve to fifteen minutes for well done.

  8. For two to two and a half inches thick steaks, cook for fifteen to eighteen minutes for rare or twenty minutes for well done.

  9. Remove the steak to a hot serving platter and sprinkle with salt and pepper.

  10. Spread with butter or Maitre d'Hotel Butter.
