What each ingredient does

Sweet potatoes
Their starch softens as they cook, giving a tender, moist, sweet flesh.

The step that matters

Covering the potatoes after cooking. Potatoes left uncovered lose moisture and cool unevenly. Covering them with a towel and lid holds in steam and heat, keeping the flesh soft and warm until serving.
