Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Separate the yolks from the whites of the eggs.

  2. Grate the rind of the lemons.

  3. Extract the juice of the lemons.

Make the filling

  1. Mix the yolks with the sugar and lemon juice.

  2. Pour the mixture into a pie crust.

  3. Bake at 350°F (175°C) until set.

Top and finish

  1. Whip the egg whites with the reserved sugar until stiff peaks form.

  2. Spread the meringue over the baked pie.

  3. Return to the oven to lightly brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the lemon filling and whites whip into the meringue topping.
Sugar
Sweetens the filling and stabilizes the whipped egg white meringue.
Lemon juice
Provides the sharp acidity that balances the sweetness of the filling.
Lemon rind
Adds concentrated lemon aroma from the aromatic oils in the peel.

The step that matters

Bake the filling until set. Underbaked yolk filling stays runny, while overbaking can make it weep or toughen, so the filling needs to be set but not overcooked.

Swap the lemon
