Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the sweet potatoes and cover them with boiling salted water.

  2. Boil gently until tender, or parboil the potatoes.

  3. Peel and cut the potatoes in halves.

  4. Dust lightly with sugar, salt, and pepper.

Roast

  1. Put the clarified butter into a small baking pan.

  2. Lay the potatoes in the pan and bake at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the starchy body that softens into a tender interior while the outside roasts.
Clarified butter
Carries heat evenly and adds richness, helping the surfaces brown to a golden colour.
Sugar
Adds sweetness and promotes caramelization and browning on the potato surfaces.

The step that matters

Boil gently until tender. The potatoes must soften fully before roasting, because the starch cooks through only with enough time in water. Boiling hard can break the outside apart, while undercooked centres stay firm and grainy after baking.
