Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
The egg white sets around the yolk during poaching, forming the main body of the dish.
Vinegar
Its acidity helps the egg white coagulate faster, keeping the whites more compact in the water.
Toast
Provides a crisp, buttery base that holds the poached egg and absorbs its yolk.

The step that matters

Cook until the egg white is firm and a film forms over the yolk. Egg white proteins set gradually with heat, so pulling the egg too early leaves runny, spreading whites, while overcooking makes the yolk firm and rubbery.
