Mashed Sweet Potatoes with Nuts

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mash

  1. Cook the sweet potatoes until tender, then mash them.

  2. Add the milk, cream, chopped nuts, salt, and pepper, and beat well.

Bake

  1. Transfer the mixture to a buttered baking dish.

  2. Dot the top with small pieces of butter.

  3. Bake in a hot oven at 400°F (200°C) until the top is browned.

Shape and fry

  1. Alternatively, spread the mixture on a platter, cool, and cut into shapes.

  2. Roll the shapes in fine bread crumbs, dip in beaten egg, then coat again in bread crumbs.

  3. Fry in deep fat until golden brown and drain on paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the bulk of the dish, and mashing them creates its soft, smooth base.
Milk
Adds moisture and loosens the mash so it beats smoothly.
Cream
Adds fat and richness, giving the mash a softer, silkier texture.
Chopped nuts
Add crunch and a toasty, nutty flavour against the soft mash.
Eggs (in the method)
Bind the coating so the bread crumbs stick to the shapes.

The step that matters

Let the mash cool before shaping. A warm, soft mash is too loose to hold its shape when cut. Cooling lets the starch set so the pieces keep their form through breading and frying.

Swap the nuts

How well each one fits the dish's main ingredients (sweet potato, milk, cream, pepper, butter):

  1. Beansfits better
  2. Almondfits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against sweet potato, milk, cream, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
