Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Season the inside of the turkey with salt and pepper.

  3. Stuff the turkey and tie it securely.

  4. Lard the top or lay bacon slices over it.

  5. Wet the skin and sprinkle with salt, pepper, and flour.

  6. Let the stuffed turkey rest for a while before cooking.

  7. Pour a little boiling water into the bottom of the roasting pan.

  8. Roast the turkey for at least 3 hours, basting frequently with butter and its own drippings.

  9. In the last moments, add more melted butter and sprinkle with flour for a crisp skin.

  10. While the turkey cooks, boil the giblets, chop them finely, and mash the liver.

  11. Once done, place the turkey on a hot platter and prepare the gravy with the drippings.
