Why it works: Pepper and mustard are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 15,430 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Potted Ham
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Mince the cold cooked ham, mixing lean and fat together.
Pound the ham in a mortar, seasoning with a little Cayenne pepper, pounded mace, and mustard.
Put the mixture into a dish and place it in a 400°F (200°C) oven for 30 minutes.
Pack the mixture into potting pots or small stone jars.
Cover with a layer of lukewarm clarified butter and tie bladders or paste paper over them.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
