What each ingredient does

Grapes
Provide the fruit, pulp and juice that form the body and flavor of the preserves.
Sugar
Sweetens the preserves and helps thicken them as they boil down.

The step that matters

Boil all together until thick. Sugar and fruit must cook long enough for the mixture to reach a gel-like thickness. Undercooking leaves it runny, while overcooking can make it stiff and sticky once cooled.
