A Beautiful Stuffed Compote

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Choose large, fine pippins of equal size. Pare and core them, leaving the apples whole.

  2. Cook the apples in syrup until three-quarters done, then drain and bake in a 400°F (200°C) oven for a few minutes.

  3. While still hot, fill the apples with peach marmalade.

  4. Roll each apple in the jelly made from boiling down the syrup to give them a glossy finish.

  5. Arrange the apples in a pyramid shape and add cream, whipped cream, or maraschino around the base.

  6. Alternatively, form the apples into a dome and cover with a meringue made from beaten egg whites and sugar.

  7. Decorate the meringue with sweet almonds and bake in the oven until browned.
