Fancy Jellies

Ingredients

Directions

  1. Pour half of the jelly into a mold and let it set.

  2. Color the remaining jelly red with a few drops of prepared cochineal.

  3. Carefully pour a layer of red jelly over the set jelly, then alternate layers until the mold is filled.

  4. For a variation, fill the mold halfway with jelly, arrange a chain of firm blanc-mange cakes, and add the remaining jelly.

  5. To make whipped jelly, whip set jelly in a bowl until full of air bubbles, then fill the mold and chill on ice.

  6. To use leftover jelly, add lemon juice, beat until white, and pour into a mold to set again.
