Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cake batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg whites until stiff.

  3. In another bowl, cream the butter and sugar together.

  4. Add the milk and vanilla to the butter mixture and mix well.

  5. Sift together the flour, corn starch, and baking powder, then add to the wet ingredients.

  6. Fold in the beaten egg whites gently.

Bake and frost

  1. Divide the batter into two or three parts and bake until golden.

  2. For frosting, beat 4 egg whites with 9 tablespoons of powdered sugar and a little vanilla.

  3. Spread frosting between layers and on top of the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and give the cake its light, airy structure.
Butter
Creamed with sugar, it adds richness and tenderness to the crumb.
Sugar
Sweetens the cake and helps hold air when creamed with butter.
Flour
Provides the main structure that sets the cake as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.

The step that matters

Folding in the beaten egg whites. Stirring vigorously knocks out the air trapped in the whipped whites, so the cake rises less and turns dense. Fold gently with a spatula, cutting through and turning the batter until just combined.
