Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the liquid into a clear, soft jelly as it boils.
Sugar
Sweetens the jelly and balances any tartness from lemon juice.
Rich milk
Adds fat and body, giving a softer, creamier jelly when used instead of water.

The step that matters

Stir and boil until thickened. Arrowroot must be fully boiled to gelatinize its starch and thicken; undercooked arrowroot stays thin and cloudy, and it should be stirred constantly to prevent lumps.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (arrowroot, milk, sugar, brandy, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against arrowroot, milk, sugar, brandy, cream. Candidates are from the same food group and used in at least 100 recipes.
