What each ingredient does

Oatmeal
Forms the body of the porridge as its starch thickens during long cooking.
Thin cream
Adds richness and a smooth, creamy mouthfeel to the gruel.
Sugar
Adds sweetness to balance the mild, earthy flavour of the oats.

The step that matters

Cooling the gruel before adding cream. Oatmeal starch keeps thickening as it cools, and adding cream to hot gruel can cause it to curdle or separate. Letting it cool first keeps the cream smooth and the texture even.
