Boiling Meat

Ingredients

Directions

  1. Choose a pot large enough for the meat to move freely.

  2. Place a plate upside-down in the pot to prevent sticking.

  3. Add cold soft water to the pot, enough to cover the meat.

  4. Add a little coarse sea salt to raise the scum.

  5. Heat the water slowly; do not let it boil too quickly.

  6. Remove the scum just before boiling and for a few minutes after.
