Cauliflowers or Brocoli

Ingredients

Directions

  1. Choose the whitest and firmest cauliflowers.

  2. Cut or break the flowers into small branches.

  3. Soak them in a strong brine (enough salt for an egg to float) for 7-10 days.

  4. Boil the cauliflowers in clean water for 10-15 minutes until tender but crisp.

  5. Drain and spread them on a cloth or sieve to dry in the sun until moisture evaporates.

  6. Place them in a jar and cover with vinegar.

  7. Add spices to the vinegar and warm it by the fire without boiling.

  8. Pour the cooled vinegar over the cauliflowers.

  9. Seal the jar and store it, topping up with vinegar as needed.
