Scrambled Eggs

Ingredients

Directions

Make the eggs

  1. In a deep pie plate, warm the sweet milk.

  2. Add butter, salt, and pepper.

  3. When the milk is nearly boiling, drop in the eggs one at a time, breaking them into a saucer first.

  4. Gently cut the eggs with a spoon or thin knife and scrape the mixture from the bottom as it cooks.

  5. If it cooks too quickly, move the dish back to cook gently and evenly.

  6. Remove from heat before fully thickened and continue to stir for a moment.

Serve

  1. Serve in a heated dish for better warmth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Coagulate as they heat, setting into soft, creamy curds that form the body of the dish.
Sweet milk
Adds moisture and dilutes the egg proteins, keeping the curds tender rather than dry.
Butter
Adds fat for richness and a smoother, silkier texture in the finished eggs.

The step that matters

Keep the heat gentle and remove from heat before fully thickened. Egg proteins set quickly at high heat and turn rubbery or watery. Gentle heat and removing the pan while the eggs are still slightly soft lets residual heat finish them, keeping them creamy.

Swap the walnut

How well each one fits the dish's main ingredients (milk, egg, butter, pepper):

  1. Walnutthe original
  2. Cocoafits about as well
  3. Peasfits about as well
  4. Almondfits about as well

Fit is the average pairing score against milk, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
