What each ingredient does

Gelatine
Sets the coffee liquid into a firm, wobbly jelly as it cools.
Coffee
Provides the main liquid and the strong coffee flavour of the jelly.
Sugar
Adds sweetness to balance the bitterness of the strong coffee.

The step that matters

Add the dissolved gelatin to the hot coffee and stir well. Gelatin must be fully dissolved and evenly mixed into the coffee. Any undissolved granules or pockets can form lumps or weak spots, so the jelly will not set uniformly.
